YUM: Birchermuesli

Geoff requested birchermuesli for breakfast this morning, so I enlisted Taft's help! Addie set the table and Trey set up the scavenger hunt for Father's Day gifts.

Recipe for Birchermuesli
An authentic German breakfast

3 cups rolled oats
1 1/2 cups milk (non-dairy, like almond milk works great!)
1/4 cup raisins
3 apples, peeled and grated
1/4 cup orange juice
2 Tbs lemon juice (fresh is best!)
1/3 cup sugar
1/4 cup plain yogurt
1/4 chopped nuts (almonds, pecans, hazelnuts, etc..)
grated rind of 1/2 lemon
3 Tbs heavy cream

1 cup blueberries
1-2 bananas sliced

Directions
Combine oats with milk and let sit for 30 minutes. Soften raisins in 1/4 cup warm water for 15 minutes. Combine oat mixture, drained raisins and next seven ingredients. Whip cream in small chilled bowl until peaks form and fold into oatmeal mixture. Fold in blueberries and bananas. 

Stacy's notes
The outcome looks like soggy oatmeal, but trust me when I tell you THIS IS DELICIOUS. You can substitute grated pear for one or more of the apples. Almost any fresh fruit tastes delicious with birchermuesli -- think peaches, strawberries, raspberries ... YUM. Because bananas will quickly soften and turn brown, we let each individual slice and add their own bananas.
